The cucumber kimchi should be left to ripen in the fridge for at least a few days. You can let it stay in fridge for weeks actually and it'll still be awesome. The radish soup with any kind of kimchi is amazing, amazing, amazing... If you have kimchi you should eat it with this soup and rice!
