Growing up in an Italian-American family (all four of my grand parents came off the boat), I was exposed to a very specific type of cuisine. The Italian food we ate was, peasant food. Very heavy on the spices but not made iwth exotic ingredients. As I got older I discovered that there are many different tastes and flavors of Italian food. I now understand there are many types of Italian food, not just the peasant food I grew up with. The Italians have different types of food depending on the region. my name is syed im 12.i want to ask all of you if this is a good recipe for past which i make myself. tke olive oil and let it heat. then add spices, parsley, and other herbs along with mushrooms if present. then add sauce to the oil and spices. next let it cook. then add pasta, and after 3 mins add cream,cheddar,and parmesian. then let it simmer. lastly sprinkle parsley on top. and finally "Bon Appetite" 10th May 2010 - 9:30am

I can't believe I found the secret to making real meatball hero, tasty meatballs. Adding crumbled up potato chips! Fresh garlic as well. Mmmmmm Mmmmm!

I had some of the best pizza of my life years ago in Copenhagen. Chewy crust, buffalo mozzarella and hard-working waiters that said "beep beep" everytime they needed to get by each other. Your pizzas remind me of some great times, Albert. Keep up the good work. (And congratulations on this web-site. It looks great!)

Hi Albert, This is a beautiful website. Took me a while but I want to share with you what I think embodies Italian Food. It's all about sharing good food with the ones you love. If you cook with love you will always have a full table of loved ones there sharing it with you. My favorite go to meal is my grandmothers meatball recipe. It is pretty simple and has all the usual ingredients but it seems that everyone thinks they are the best meatballs. My neighbors six year old daughter Gracie stops by regularly to see if I have any meatballs ready for her. At any rate for a nominal investment of time you can make a batch of meatballs to feed an army and this is always a welcome meal in my house. Thanks Grandma!!!

I just wanted to point out that having Pizza often doesn't have to translate to extra pounds either. What I do to avoid adding the extra pounds is by rolling my dough thin and preparing my own sauce, which allows me to eliminate all that high-fructose-corn-syrup. Also, by making your own sauce you can add the amount of salt that you want, for those watching their sodium intake. Furthermore, avoid the frozen-pizza! Hello Albert, just a short note to thank you for your website. It has been a great resource for my latest hobby, which of course is making pizza. I just got your book the other day and did a quick once over and cant wait to try some of the recipes. Once I try your dough recipe I will email you and let you know how it went, we have been eating so much pizza in the last couple of months I am almost getting tired of Pizza, (God Forbid) I never thought our family would feel that way since all five of us are Pizza fanatics ......but we have found that we are saving a boatload of money since our pizza takeout habit was really putting a dent in our budget, and all the kids think my pizza is better than our old favorite local pizza place, and it is really, really good pizza but they now like mine better. Needless to say it is a huge compliment since they are such pizza aficionados..... thanks again, and I will let you know how it goes, take care, Kevin
